The Gustafson RV LED Pendant Light part # 277-000451 has a rod that is threaded on both ends to accommodate the nut that holds the pieces together. Shortening it is possible but not an easy task. You would need to disassemble the fixture. Cut the tube down to you desired length. With trailer tires you have to keep them inflated to their max psi at all times otherwise you risk tire failure and diminished capacity.

As you mentioned in your question, most of our double sinks have a standard rectangular design that don't quite match the offset shape of your existing unit. As long as your current tires are 16" and your bolt pattern is 8 on 6-1/2 the # AM20768 will work as a spare. From the videos I found it looks like you do have the 8 on 6-1/2 bolt pattern but nobody focuses in on the wheels and tires so I would double check.
